Chocolate Chia Pudding2.JPG

This pudding is so delicious and is dairy free and sugar free. It is full of essential fatty acids from the chia seeds as well as antioxidants. And works well as a carrier for probiotics or other supplements for children that need to be given in food. Top with any type of berry or fruit, nuts, cacao nibs, shredded coconut, gogi berries, etc. May add in cinnamon, shredded ginger or sliced mint leaves to elevate flavors.

Ingredients:

1 cup unsweetened coconut yogurt
1/2 cup almond or coconut milk
1/4 cup chia seeds
1/4 cup pure maple syrup or stevia to taste
2 tablespoon raw cacao powder or unsweetened cocoa powder
1/2 teaspoon of cinnamon, shredded ginger, or sliced mint leaves, optional
Strawberries or other berries to top

Whisk all ingredients together except strawberries (or other berries). Spoon into jars or bowls. Set aside for at least 20 mins or overnight in the refrigerator. Top with berries, nuts, shredded coconut, cacao nibs, etc. Enjoy!
