Quinoa Tabbouleh

Ingredients: 1 cup quinoa, rinsed and cooked in 1 ¾ cups water for 15 minutes ½ diced red onion (depending on how onion-y you like it) 3 sliced green onions 4 cups diced tomatoes, any kind 1 bunch fresh parsley, finely chopped 3 tablespoons fresh ba…

Ingredients:
1 cup quinoa, rinsed and cooked in 1 ¾ cups water for 15 minutes
½ diced red onion (depending on how onion-y you like it)
3 sliced green onions
4 cups diced tomatoes, any kind
1 bunch fresh parsley, finely chopped
3 tablespoons fresh basil, finely chopped
2 tablespoons fresh mint, finely chopped

Combine all ingredients in a big bowl. Prepare dressing.

Dressing:
Juice from 5-6 lemons
3-4 cloves of garlic
1 tablespoon olive oil
Sea salt
Pepper

Combine all dressing ingredients in a food processor, Magic Bullet, or blender and blend until smooth.

Pour dressing over quinoa mixture. Serve topped with sliced avocado.
