A perfect summer salad which is not only very satisfying, nutrient dense and full of living, vibrant energy, but is also highly detoxifying. Cilantro is especially good at pulling heavy metals out of the body.

(Very similar to Quinoa Tabbouleh, except cilantro is substituted for the parsley and lime juice for the lemon juice.)

1 cup quinoa (rinsed and cooked in 1 and ¾ c water for 15 minutes)
½-1 red onion (depending on how onion-y you like it)
4 cup diced tomatoes (any kind)
1 big bunch fresh cilantro (finely chopped)
3 tablespoon fresh basil (finely chopped)
2 tablespoon fresh mint (finely chopped)

Combine all ingredients in a big bow. Prepare dressing.

Dressing:

Juice from 5-6 limes
3-4 cloves of garlic
3 tablespoon olive oil
Sea salt
Pepper

Combine all dressing ingredients in a food processor, magic bullet or blender. Blend until smooth.

Pour dressing over quinoa mixture. Serve topped with sliced avocado.
